Not knowing the application 'if' I just wanted to monitor an output oscillating I'd either use 2 trans relays with timers or esp32's

You might be better with window foil. I hate glass break sensors generally but I'd suggest a different glass break detector assuming you have it sited correctly.

the tamper is probably global, not just the tamper spring on the panel.
One of them will be open circuit either the sab you have replaced or the tamper input
There is a huge security issue of letting anything control an alarm. Think insurance liability in our world. However it should be doable having a pro system with integration. It is doable but needs more imo. However the standards currently prevent it. Some integrations require engineer access between which is daft. I would watch this space I'm working with a manufacturer with this in mind

I see the benefit of connecting the to home assistant or mqtt etc but use a proper panel that can do that rather than bolt on a bodge
yes most panels have a speaker output for alert, setting unsetting, chime tones etc.
Some panels this is a switched output like a bell on others its a speaker output usually for a 16 Ohm load
its going into the user menu. It shoudnt do that unless the code is being entered twice.
You also shouldnt be seeing 'boot-up' as that is saying it has restarted
