to do what you want a dialler is possible but you would be far better off with a native app imho

Smoke detection in yhis case would be classed as ancillary devices and would not need to be disconnected. However they are not the same as a 5839 fire alarm. But i have smokes and Co on my own alarm

You could connect the bell trigger to the dialler, the comms header is for proper comms devices

Bear in mind that if you extend that time your bb is still going down its just waiting till its down for the time set. Most people don't use the Internet 24/7 but your alarm is.

so when on the poe switch of the nvr you can ping them?

I'd assume you have checked you can ping them etc from the dvr location. How are the wired, multiple switches etc?
